The Story of Spices

For thousands of years, spices have played a pivotal role in global trade, economics and culinary experiences. In this course, we will discuss the origin of spices, ancient spice trade routes and the role of European powers in the spice trade. We will explore 15 different spices, and Elena Ulev will demonstate how to make 2 international dishes: red lentil dal and Bulgarian meatballs using a vartiey of these spices. Students will get to eat these 2 dishes at the end of class.

There is a classroom session at the University of Montana on March 18th and cooking demos will be on March 19th and 20th at the Missoula Food Bank Kitchen.
